Introduction

Going beyond the misconception of Indigenous cuisine, Chef Joseph Shawana is redefining the food of his culture by going to the roots of what Indigenous food really is. His pre-colonial approach and techniques made his restaurant one of the best restaurants in Canada, and made the top spot on the Ontario food awards by winning top restaurant in the World Cuisine category and in 2021 He won the Glenfiddich Chef of the Year Award. Chef Joseph Shawana has many accolades and has cooked in Canada, United States of America, France, England and Germany where he showcased not only the food he creates but promotes Indigenous Food Tourism in Canada.
